Rice koji
In 2006, rice koji mold was recognized as a “national fungus” in Japan;
it is regarded as a valuable asset that has been carefully nurtured by the
Japanese people since ancient times and has contributed greatly to the
development of a rich food culture.
Koji is low in calories, rich in three major enzymes, and has an excellent
absorption rate of nutrients. Rice koji also has the power to render food
even more delicious by producing amino acids that accentuate the flavor of
ingredients.

The Story of Maazel Maazel
The founder, Hiroshi Tsuji, has developed skills as a mixologist (he is a former bartender) and his knowledge as a vegetable sommelier led to the birth of Maazel Maazel in 2013. With the concept of “Health and Beauty” in mind, he thought about how he could make it easier for people all over the world to enjoy a wide variety of vegetables. Over the course of about two years, he arrived at the idea for the current product, the soup smoothie. His establishment was the first café restaurant in Yamaguchi Prefecture to be certified by the Japanese Vegetable Sommelier Association. Lunch included a plate of seasonal vegetables and a soup smoothie made with “Maazel paste”, a mixture of 34 different vegetables. Many of the customers made comments such as: “I can sense a lot of vegetables, and it has a gentle deliciousness.” “I’d like to send some of this nutritious soup to someone who’s not feeling well.” “I want to give this to my grandchild, who has started weaning.” “I’m busy, and I’d like to have this as a small meal at lunch while dieting.”
The soup smoothie was well-received and developed as a product based on the opinions of many customers. “Retain the same flavor as at the restaurant. Make it delicious and gentle to the body.” This was the concept that we based the product on, and we put our heart and soul into carefully developing the soup smoothie. Even now, we continue to evolve by making constant improvements such as bettering our formulas and combinations and developing new products, so that our customers may shine. It is our company’s mission to make it easy for people to eat plenty of vegetables anytime and anywhere, to add sparkle to their lifestyle with our soup smoothies, which are made without preservatives and can be stored at room temperature for a long term due to heating and pressurized sterilization.
